No friends, I did not fall off the wagon! This Tater Tot Casserole was modified from its original form to be lifestyle change friendly. "How?" you say, well, like this: - 1 lb ground chicken breast - 2 small or 1 lg clove garlic - 3/4 c finely diced onion - 1/2 c petite peas - 1/2 c finely diced carrot - 1 Tbsp ketchup - 1 Tbsp Worcestershire Sauce - 1 can 98% fat free cream of celery or cream of mushroom soup - 20 tater tots cut in half lengthwise Take out your tots, count, and set aside. Preheat oven to 425 degrees. Cook onion, carrot, and garlic until onion is translucent (just add water to keep it from sticking and stir often), add ground chicken and some house spice or just salt if you don't have house spice, once cooked, drain, then add cream soup, ketchup, and Worcestershire sauce to the meat and veg, stir and taste. Add additional seasoning to taste. Return to you partially thawed tots and cut them in half lengthwise. Put meat/veg/sauce mixture in a baking dish and top with tots (I use a deep @Pyrex that's about 5"x9" as it fits my tot count perfectly). Top with tots, cut side down. Bake uncovered at 425 degrees for 20-30 mins depending on your crunch preference. Breakfast feels pretty fancy this morning - homegrown, homemade marmalade and first go at sourdough ❤️ was worried my very young starter wouldn't be strong enough, but it's done the job. I've always thought sourdough was quite expensive - I understand why, now!! SO MUCH WORK.
