4. 沖シジミの三昧 : 3. 沖シジミ汁に沖シジミと新生姜のかき揚げをお浸して Okishijimi (Sea Shijimi Clams) 3 ways: Third: Dip Oki-Shijimi Kakiage with Shinshoga (young ginger) in Oki-Shijimi Soup _ The third way of enjoying oki-shijimi clams was to dip the fried clam fritter into the clam soup. The amazing part was that while the two items came from the same clams and were completed in different ways, now they came back together and not just that, the soup completely changed taste as the ginger and mitsuba and the fried oil turned the soup to another flavor profile. They all reunited and became something new. _ If you think of this whole flow, the idea really was not similar to Japanese traditional cooking. In fact I think this chef thinks more like modern western chefs, but the ways he presented his thoughts were entirely Japanese based.
